An ancient wheat consumed by Egyptians Romans and Greeks and mentioned in the Bible. Used in bread pilafs cereals and pasta spelt became available in the U.S. in the 1980’s. Its chewy texture and assertive flavor make hearty robust breads. Spelt does contain gluten but is easier to digest than ordinary wheat for many people.
