Okra

Hailing from Ethiopia this khaki green vegetable was brought to the United States by slaves. The slightly fuzzy exterior of the pods conceal a mucilaginous core embedded with white seeds quite pretty when sliced crosswise into rounds. Best known as an ingredient in Gumbo it may be stewed fried or sauteed preferably with some type of acid. Okra is high in carotene and vitamin C.
